Tomato and Aubergine Salad

This recipe is quick to make, not much prep, perfect for lunch or dinner. You can add some lentils and feta cheese to make it a full meal.

Ingredients:

Tomatoes
Aubergines
Cucumber
Celery
Parsley or basil
Extra virgin olive oil
Cornish sea salt
Black pepper

Method:


Thinly slice the aubergines and grill them on both sides for a few minutes, using a bit of salt and oil.

Meanwhile, cut the tomatoes, slice the celery and cucumber. Toss in a bowl with some salt, fresh ground black pepper and extra virgin olive oil. With your hands tear the fresh herbs on top of it, parsley or basil works well but also dill.

Once the aubergines are done and not too hot, roll them a bit and place them in the bowl too.
