White Sauce (Bechamel)

Ingredients

40g butter or margarine
2 tablespoons of flour
300ml of warmed milk
salt and freshly ground pepper

Method

Melt butter or margarine in a heavy-bottomed pan and stir in flour with a wooden spoon.
Add milk slowly, stirring constantly until the sauce thickens.
Season to taste and simmer on a very gentle heat for 6 - 8 minutes.
Thin out with a little more milk if necessary.
