Chard and Risotto Rice Soup

You can make this with chard, spinach, pac choi or any other green leaves. Serves 4.

Ingredients

Large bunch of chard
Olive oil
1 onion, chopped
1-2 garlic cloves, finely chopped
1 chilli, finely chopped
4 oz risotto rice
2 pints vegetable stock
Seasoning
Parmesan, optional

Cooking Instructions

Cut the green leafy parts off the chard and wash, save the stems for stir-frying. Cook the chard using only the water clinging to the leaves, then chop finely and retain any liquid. Sauté the onion, garlic and chilli in a little olive oil until softened, add the rice and stir. Add the stock and any leftover liquid from the chard. Simmer until the rice is almost cooked, add the cooked chard and add seasoning. Once the rice is cooked and the chard has heated through, serve with grated parmesan.

Gratin of Chard & New Potatoes

Ingredients

  • 5 tbsp olive oil, plus extra for greasing
  • 450g/1lb ruby or Swiss chard, stems and broad ribs cut into 1cm/½in pieces, leaves finely sliced
  • salt and freshly ground black pepper
  • 60g/2oz black olives, stones removed
  • 2 canned anchovy fillets, chopped
  • 2 sun-dried tomatoes, chopped
  • ½ tbsp capers, rinsed and drained
  • 1 tbsp chopped fresh parsley
  • 400g/14oz new potatoes, scrubbed, boiled until just tender, drained and sliced
  • 60g/2oz gruyère cheese, grated
  • 30g/1oz parmesan, freshly grated

Method

1. Preheat the oven to 190C/375F/Gas 5.
2. Heat two tablespoons of the olive oil in a wide, lidded pan and add the chopped chard ribs. Stir, then cover and cook over a low heat for four minutes, stirring occasionally.
3. Add the leaves, stir, then cover again and cook for a further five minutes, or until just tender. Season with salt and freshly ground black pepper and set aside.
4. Place the olives, anchovies, sun-dried tomatoes, capers, parsley and two tablespoons of olive oil into a food processor and blend to make a smooth paste.
5. Lightly oil a 30cm/12in ovenproof dish. Place a layer of the chard, along with any cooking juices, and a layer of the cooked potatoes into the dish. Spread a little of the olive paste over the chard and potatoes and season with freshly ground black pepper. Continue to layer up the chard and potato, spreading more of the olive paste between each layer and finishing with a layer of chard.
6. Mix the gruyère and parmesan in a bowl and sprinkle over the top of the gratin. Drizzle over the remaining tablespoon of olive oil.
7. Transfer to the oven and bake for about 25-30 minutes, until the cheese is browned and bubbling. Serve hot or warm.

Swiss Chard with Garlic and Pepper

Ingredients

1 large bunch of fresh Swiss chard
1 small clove garlic, sliced
2 Tbsp olive oil
2 Tbsp water
Pinch of dried crushed red pepper
1 teaspoon butter
salt

Cooking Instructions

Rinse out the Swiss chard leaves thoroughly. Roughly chop into inch-wide strips. Remove the toughest third of the stalk, discard.
Heat a saucepan on a medium heat setting, add olive oil, a few small slices of garlic and the crushed red pepper. Sauté for about a minute. Add the chopped Swiss chard leaves. Cover. Check after about 5 minutes. If it looks dry, add a couple tablespoons of water. Flip the leaves over in the pan, so that what was on the bottom, is now on the top. Cover again. Check for doneness after another 5 minutes (remove a piece and taste it). Add salt to taste, and a small amount of butter. Remove the swiss chard to a serving dish. 

Tomato and Chard Pie

Ingredients

350 g chard, shredded
350 g tomatoes, peeled and chopped
2 tablepsoons olive oil
1 clove garlic, crushed
1 onion, peeled and chopped
4 tablespoons chopped fresh parsley
1 teaspoon dried sage
2 eggs, beaten
115 g cheddar cheese, grated
Shortcrust pastry for your flan dish

Cooking Instructions

Preheat the oven to 220°C/ 425°F/ Gas Mark 7. Line a 20 cm/ 8 inch flan dish with pastry and bake blind for 3-4 minutes. Reduce the heat to 200°C/ 400°F/ Gas Mark 6. Heat the oil in a pan and sauté the onions and garlic. Add the tomatoes, chard, herbs and seasoning and simmer the mixture for another 5 minutes. Pour this into the pie dish when ready. Place the beaten eggs over the sauté mixture, top with the grated cheese and bake for 15 minutes. Serve hot.
